Ingredients

  • ½ pound ground meat (hamburger, chicken, or turkey)
  • ½ medium onion, diced
  • 1–2 cloves garlic, minced (or 1 teaspoon jarlic)
  • 2 cups russet potatoes, diced small (or frozen diced hash browns)
  • 1 cup beef broth
  • ½ (14.5-oz) can diced tomatoes, undrained
  • ½ can condensed cheddar cheese soup
  • ½ cup milk
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt, pepper, and seasoned salt, to taste
  • ½–¾ cup shredded cheese, cheddar or blend
  • ½ cup heavy cream
  • Chopped green onions, for topping (optional)

Instructions

  1. In a skillet over medium heat, brown the ground meat until fully cooked; drain excess grease.
  2. Transfer the cooked meat to the slow cooker.
  3. Add onion, garlic, potatoes, beef broth, diced tomatoes, cheddar soup, milk, basil, oregano, and seasonings. Stir to combine.
  4. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are tender.
  5. During the last 30 minutes, stir in the shredded cheese and heavy cream.
  6. Cover and cook until the cheese is melted and soup is hot. Stir once more before serving.

Tips & Suggestions

  • Add ½–1 cup canned or frozen vegetables (corn, peas, or mixed veggies) if desired.
  • For thicker soup, mash a few potato pieces against the side of the crockpot before adding the cheese.
  • If using hash browns, reduce cook time slightly and check at the lower end.
