Ingredients
- ½ pound ground meat (hamburger, chicken, or turkey)
- ½ medium onion, diced
- 1–2 cloves garlic, minced (or 1 teaspoon jarlic)
- 2 cups russet potatoes, diced small (or frozen diced hash browns)
- 1 cup beef broth
- ½ (14.5-oz) can diced tomatoes, undrained
- ½ can condensed cheddar cheese soup
- ½ cup milk
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- Salt, pepper, and seasoned salt, to taste
- ½–¾ cup shredded cheese, cheddar or blend
- ½ cup heavy cream
- Chopped green onions, for topping (optional)
Instructions
- In a skillet over medium heat, brown the ground meat until fully cooked; drain excess grease.
- Transfer the cooked meat to the slow cooker.
- Add onion, garlic, potatoes, beef broth, diced tomatoes, cheddar soup, milk, basil, oregano, and seasonings. Stir to combine.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are tender.
- During the last 30 minutes, stir in the shredded cheese and heavy cream.
- Cover and cook until the cheese is melted and soup is hot. Stir once more before serving.
Tips & Suggestions
- Add ½–1 cup canned or frozen vegetables (corn, peas, or mixed veggies) if desired.
- For thicker soup, mash a few potato pieces against the side of the crockpot before adding the cheese.
- If using hash browns, reduce cook time slightly and check at the lower end.
