Ingredients

  • 6 large eggs
  • 1/3 cup milk (or unsweetened almond milk)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/2 pound turkey sausage or lean pork sausage, cooked and drained
  • 1/2 cup chopped spinach (fresh or frozen, drained)
  • 1/4 cup chopped bell pepper (any color)
  • 1/4 cup chopped onion
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray

Directions

  1. Cook the sausage:
    In a skillet over medium heat, cook sausage until browned and crumbly. Drain and set aside to cool slightly.
  2. Preheat oven:
    Set oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with nonstick spray.
  3. Mix the casserole:
    In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper. Stir in the cooked sausage, cheeses, spinach, peppers, and onions. Pour mixture into the prepared dish.
  4. Bake:
    Bake uncovered for 30–35 minutes, or until the center is set and the top is lightly golden.
  5. Cool and serve:
    Let cool for 5 minutes before slicing into 4 squares.

Make Ahead Instructions

  • Mix the night before: Prepare the casserole as directed through step 3. Cover and refrigerate overnight.
  • In the morning, bake as directed (add 5 extra minutes to cook time if chilled).

Storage

  • Refrigerate: Store leftovers in an airtight container for up to 4 days.
  • Freeze: Wrap individual portions tightly in plastic wrap and place in a freezer bag for up to 2 months.
  • Reheat: Warm in the microwave for 45–60 seconds, or bake at 350°F until heated through.
