Ingredients
- 2 cups mashed sweet potatoes (from about 1–1½ lbs sweet potatoes)
- 2 tablespoons melted butter
- ⅓ cup sugar
- 1 egg
- ¼ cup evaporated milk
- 1 pinch salt
- 2 mini pie shells (4–5 inch)
Directions
- Peel and chop sweet potatoes, then boil until soft. Drain and mash until smooth.
- Preheat oven to 375°F. Place a cookie sheet inside the oven to preheat—it helps the crust bake evenly.
- In a bowl, mix mashed sweet potatoes, melted butter, sugar, egg, evaporated milk, and salt using an electric mixer or food processor until smooth.
- Poke a few small holes in the bottom of each mini pie shell with a fork.
- Divide the filling evenly between the two mini pie shells.
- Bake for 20–25 minutes, or until the centers are set and the edges are lightly golden.
- Cool 10–15 minutes before serving.
