Ingredients

  • 2 tablespoons cooking oil, divided
  • 7 oz sausage, cut into half moons
  • ½ cup onion, chopped
  • 2 cups frozen Southern-style hashbrowns
  • Salt, pepper, and seasoned salt, to taste

Directions

  1. Heat 1 tablespoon of oil in a cast-iron or nonstick skillet over medium heat.
  2. Add the sausage and onions. Cook until the sausage has browned slightly and the onions are soft.
  3. Remove the sausage and onions to a plate.
  4. Add the remaining 1 tablespoon oil to the skillet and allow it to heat up.
  5. Add the hashbrowns and seasonings. Cook until the hashbrowns are almost done, stirring occasionally.
  6. Return the sausage and onions to the skillet. Cook until the hashbrowns are fully cooked and everything is heated through.

Substitutions & Additions

  • Use more or less onion based on your taste.
  • Add diced bell peppers with the onions for extra flavor.
  • Shredded hashbrowns will cook faster than Southern-style chunks.
  • Adjust seasonings any way you like — garlic powder, paprika, Old Bay, Cajun seasoning, etc.
  • Let the hashbrowns thaw before cooking to reduce cook time.

Serving Suggestions

  • Serve with a simple side salad for a quick meal.
  • Stir in drained canned vegetables near the end of cooking (corn, green beans, peas).
