Roasted Garlic Parmesan Asparagus for Two

Ingredients

  • ½ pound fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • 1 small garlic clove, minced (or ¼ teaspoon garlic powder)
  • 1 tablespoon grated Parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Optional: squeeze of lemon juice after roasting

Instructions

  1. Preheat oven to 400°F.
  2. Lay asparagus in a single layer on a baking sheet.
  3. Drizzle with olive oil, sprinkle garlic, salt, and pepper. Toss gently to coat.
  4. Roast for 10–12 minutes, until tender but still slightly crisp.
  5. Sprinkle with Parmesan and roast 1–2 minutes more.
  6. Optional: add a light squeeze of fresh lemon juice before serving.

Tips

  • If your asparagus spears are very thick, roast them 2–3 minutes longer.
  • For extra browning, turn on the broiler for the last 1 minute.
  • Can swap Parmesan for a dairy-free cheese sprinkle if desired.
