Instructions:

  1. Combine dry ingredients in a bowl.
  2. Stir in butter, egg yolk, lemon juice, and zest.
  3. Divide into mugs; microwave 1½–2 minutes.

Tips:

If using self-rising flour omit the baking powder.

Dust with powdered sugar or glaze with lemon icing.
