Ingredients
- 4 large eggs
- 2 tablespoons milk (or half-and-half)
- 1 tablespoon olive oil or butter
- 1 cup frozen mixed vegetables, thawed (such as peas, carrots, and corn)
- 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
- 1 tablespoon finely diced onion or “Easy Onion”
- Salt and pepper, to taste
Directions
- Preheat the oven to 375°F (190°C). Lightly grease a small oven-safe skillet or baking dish.
- Beat the eggs and milk together in a bowl until well blended. Stir in onions, a pinch of salt, and pepper.
- Heat the oil or butter in the skillet over medium heat. Add the thawed vegetables and sauté for 2–3 minutes until warm.
- Pour the egg mixture evenly over the vegetables. Sprinkle shredded cheese on top.
- Cook on the stovetop for 2–3 minutes, just until the edges start to set.
- Transfer the skillet to the oven and bake for 15–18 minutes, or until the center is set and the top is lightly golden.
- Cool slightly, then slice into wedges and serve warm.
