Ingredients

  • 4 large eggs
  • 2 tablespoons milk (or half-and-half)
  • 1 tablespoon olive oil or butter
  • 1 cup frozen mixed vegetables, thawed (such as peas, carrots, and corn)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
  • 1 tablespoon finely diced onion or “Easy Onion”
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 375°F (190°C). Lightly grease a small oven-safe skillet or baking dish.
  2. Beat the eggs and milk together in a bowl until well blended. Stir in onions, a pinch of salt, and pepper.
  3. Heat the oil or butter in the skillet over medium heat. Add the thawed vegetables and sauté for 2–3 minutes until warm.
  4. Pour the egg mixture evenly over the vegetables. Sprinkle shredded cheese on top.
  5. Cook on the stovetop for 2–3 minutes, just until the edges start to set.
  6. Transfer the skillet to the oven and bake for 15–18 minutes, or until the center is set and the top is lightly golden.
  7. Cool slightly, then slice into wedges and serve warm.
