Prep Time: 5 minutes

Cook Time: 25–30 minutes

Total Time: 30–35 minutes

Servings: 2

Ingredients

  • 1 (14.5-ounce) can sliced peaches in heavy syrup (or half of a 29-ounce can)
  • ½ cup self-rising flour
  • ½ cup sugar
  • ¼ cup (4 tablespoons) butter, melted
  • ½ cup liquid (peach juice + milk)
  • ½ teaspoon vanilla extract (optional)

Directions

  1. Combine the flour and sugar in a mixing bowl.
  2. Stir in the melted butter, liquid (peach juice + milk), and vanilla until smooth.
  3. Add the peaches anxd gently fold them into the batter.
  4. Pour into a greased 8×8-inch baking dish (or similar).
  5. Spread the peaches evenly throughout the pan.
  6. Bake at 350°F for 25–30 minutes, or until the top is golden and the edges are set.

Substitutions

  • Use peaches in light syrup or juice.
  • Substitute margarine for butter.
  • Replace sugar with artificial sweetener or reduce the amount.
  • Swap peaches for other fruit or pie filling.
    • Reduce or omit sugar when using pie filling.
    • Fresh or thawed frozen fruit works well.
  • Add ⅛–¼ teaspoon cinnamon for extra flavor.

Tips

  • The more peach juice you use, the stronger the peach flavor.
  • For a more cake-like cobbler, bake 5 minutes longer.
  • Cut peaches into smaller pieces for more even distribution.
  • Delicious topped with vanilla ice cream.
