Ingredients

  • 2 cups mashed sweet potatoes (from about 1–1½ lbs sweet potatoes)
  • 2 tablespoons melted butter
  • ⅓ cup sugar
  • 1 egg
  • ¼ cup evaporated milk
  • 1 pinch salt
  • 2 mini pie shells (4–5 inch)

Directions

  1. Peel and chop sweet potatoes, then boil until soft. Drain and mash until smooth.
  2. Preheat oven to 375°F. Place a cookie sheet inside the oven to preheat—it helps the crust bake evenly.
  3. In a bowl, mix mashed sweet potatoes, melted butter, sugar, egg, evaporated milk, and salt using an electric mixer or food processor until smooth.
  4. Poke a few small holes in the bottom of each mini pie shell with a fork.
  5. Divide the filling evenly between the two mini pie shells.
  6. Bake for 20–25 minutes, or until the centers are set and the edges are lightly golden.
  7. Cool 10–15 minutes before serving.
