Ingredients

  • 1 cup elbow macaroni (uncooked)
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons grated Parmesan (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon garlic powder (optional)
  • Optional garnish: chopped parsley or extra cheese

Directions

  1. Bring a small pot of salted water to a boil. Add macaroni and cook according to package directions; drain and set aside.
  2. In the same pot, melt butter over medium heat. Sprinkle in the flour and whisk for about 1 minute to form a smooth paste.
  3. Slowly whisk in the milk and cook until the sauce thickens, 2–3 minutes.
  4. Reduce heat to low and stir in cheddar cheese (and Parmesan if using) until melted and creamy.
  5. Add salt, pepper, and garlic powder if desired.
  6. Stir in the cooked macaroni until well coated.
  7. Serve warm, topped with extra cheese or parsley.
