- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1 tablespoon milk or cream
- 1/2 teaspoon vanilla extract
- 1/4 to 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg (optional)
- Pinch of salt
- 1 to 1 1/2 cups miniature marshmallows
Directions
- Preheat oven to 375°F (190°C).
- Place sweet potato cubes in a small pot and cover with water. Bring to a boil and cook until tender, about 10–12 minutes.
- Drain well, then transfer potatoes to a mixing bowl.
- Add butter, brown sugar, milk or cream, vanilla, cinnamon, nutmeg (if using), and a pinch of salt. Mash until smooth and creamy.
- Spread the sweet potato mixture evenly into a small casserole dish (about 6×6 or similar size).
- Sprinkle or generously cover the top with miniature marshmallows.
- Bake for 8 to 10 minutes, or until marshmallows are golden brown and lightly toasted.
