Ingredients

  • 1½ cups breadcrumbs or Panko
  • 2 tablespoons cornmeal (optional)
  • 2 teaspoons salt
  • 2 teaspoons paprika (smoked paprika recommended)
  • ¾ teaspoon celery salt
  • ¾ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder

Instructions

To Make the Seasoning Blend

  1. Add all ingredients to a mixing bowl.
  2. Stir until well combined.
  3. Transfer to an airtight container and store in the pantry until ready to use.

To Use the Seasoning Blend

  1. Preheat oven to 400°F.
  2. Scoop out about ½ cup of the seasoning blend (or enough to coat your protein) and place it in a zipper bag.
  3. Choose your protein: boneless or bone-in chicken, or pork chops.
  4. Pat the meat dry with paper towels.
  5. Lightly brush the meat with oil.
  6. Add one piece of meat at a time to the bag and shake until well coated.
  7. Press the seasoning onto the meat to help it adhere.
  8. Place meat on a baking sheet.
  9. Bake uncovered:
    • Boneless chicken or pork chops: about 20 minutes
    • Thick cuts or bone-in chicken: about 45 minutes
  10. Check doneness with a meat thermometer:
  • Chicken: 165°F
  • Pork: 145°F
